Below the Main Plaza you will find one of the best wine cellars in Mexico: “Vino de México Xcaret”. This cellar houses 180 labels of fine Mexican wine, and a collection of items for production and tasting.

Walk through its underground corridors and stone carved chambers, that preserve more than 400 years of Mexican wine history. In addition, it’s the perfect place for weddings and special events for small groups over 10 people.

5-COURSE FOOD AND WINE TASTING TOUR


When reserving a 5-course food and wine tasting experience, you will enter different rooms of the “Vino de México Xcaret” wine cellar. At each area, you will have a detailed explanation, as well as the tasted wine labels. The experience includes two varieties of white wine, two of red wine, and fantastic dessert wine in the end.

The sommelier and the chef will take you on a journey of flavors where each wine complements the tasting time. A magnificent journey through Mexican wine from the best vineyards in Mexico that will leave a pleasant taste in your mouth.

To appreciate great wines through your sight, smell and taste. A wine tasting is a sensory experience of different wines to know all their properties and characteristics where you enjoy the nuances, sensations, aromas, quality and many more experiences.
See, swirl, smell and sip. You’ll have to follow these steps in this order to fully enjoy your wine.
Prior to you pairing or tasting experience, avoid strong flavors like coffee, tobacco or mint. It is better if you haven't eaten in a while. Drink plenty of water. Don’t wear perfume since the smell with overcome the wine aroma. Start with the lighter wines.
You can describe the taste of wine in four categories: fruit level, sweetness, body and finish.
For fruit level, you can describe it as: sweety of savory according to the taste.
For sweetness, you can describe it as: bone dry, dry, off-dry, semi-sweet and sweet.
For body, you can describe it as: light-bodied, medium-bodied, full-bodied.
For finish, you can describe it as: smooth, spicy, bitter and the finish length.
Sommeliers recommend not eating for at least an hour prior to a tasting in order to properly clear your palate. But if you are hungry, just avoid food with too much garlic, onions, capers, or anything with a lingering smell or taste.
Four varieties of wine are an ideal number for a good wine tasting or pairing, since each bottle is enough for 12 to 15 people. In Xcaret's wine pairing you will taste two reds, two whites and a delicious wine dessert.
